My husband / business partner and I have known Greg O'Neill for nearly twenty years. Not long after he opened Chicago's premier artisan cheese shop, Pastoral Artisan Cheese, Bread & Wine, we opened Illinois' first farmstead creamery in Champaign, Illinois.
